Peanut Butter Oat Bites

A quick snack that needs no oven and gives little helpers the best job: rolling the mixture into bite-size balls.

How to make them

  1. Add the oats, peanut butter, honey, mini chocolate chips, flaxseed if using, vanilla, cinnamon and salt to a large bowl.
  2. Stir until everything is evenly coated and the mixture holds together when pressed.
  3. Cover and refrigerate for 30 minutes. Chilling makes the mixture easier to roll.
  4. Scoop about 1 tablespoon at a time and roll between your palms into 1-inch balls.
  5. Place in a covered container and refrigerate until ready to eat.

Easy variations

Swap mini chocolate chips for raisins, dried cranberries or shredded coconut. If the mixture feels too dry, mix in another spoonful of peanut butter; if too sticky, add a few more oats.

Storage

Keep refrigerated in an airtight container for up to 1 week.
